'Under-recording' in 7-day records of 6- to 18-year-old pupils

Abstrakt

The Austrian Study on Nutritional Status (ASNS) deals with the assessment of nutritional habits in general as well as the nutritional knowledge and status of distinctive population groups in Austria. This paper describes results of the study in 6- to 18-year-old school children. Data had been collected by means of questionnaires, anthropometric measurements and sampling of fasting blood and urine. Further more, 7-day records of 1209 schoolgirls and -boys were evaluated. Using the Cut-Off-2-Values derived by Goldberg et al. the systematic error 'Under-recording' (UR = energy intake/basal metabolic rate <1.10) was determined. In the 6- to 9-year-old children only few records with UR were found (4 %). With the beginning of puberty UR is more pronounced in the female (25 %) than in the male group (12 %). Among the under-recorders wt: found a significantly higher proportion of overweight children (25 %) than in the group without UR (12 %). This result was confirmed by changes in body weight during the recording period, in obese under-recorders weight loss was more frequent. In cases of UR we found significantly lower nutrient densities for fat and sucrose and significantly higher ones for protein, dietary fibre, iron, zinc,retinol, tocopherol, thiamine and folic acid.
